How we buy it
We buy on net weight after de-glazing, never on gross weight. At 10% glaze a price on gross weight is 11 percent dearer than it looks, so every offer we compare is converted to net first, and that is how it goes into the contract.
Glaze and size are re-measured by sample on arrival. We weigh cartons before and after de-glazing, count the sizes against the grade and hold the label next to the specification. Findings go back to the plant the same week, with photos.
The plant is on the EU list of approved establishments and we check it ourselves before the first order. The lot code on the carton runs back to the harvest, so a question from a shop months later still has an answer.
